Servings: 6 servings

Ingredients

  • 3 lb yellow onions thinly sliced ($2.40)
  • 4 tbsp butter ($0.70)
  • 1 tsp sugar ($0.01)
  • 1 tsp salt ($0.02)
  • 2 tbsp all purpose flour ($0.03)
  • 6 cups low sodium beef broth ($2.40)
  • 1 tbsp Worcestershire sauce ($0.15)
  • 1 tsp dried thyme ($0.10)
  • 1 bay leaf ($0.05)
  • ½ tsp black pepper ($0.03)
  • 6 slices French bread cut 1 inch thick ($1.00)
  • 1½ cups shredded Swiss cheese ($2.10)

Method

  1. Melt the butter in a large pot over medium heat. Add the onions, sugar and salt and stir to coat.
  2. Cook, stirring every few minutes, for 45 to 50 minutes, until the onions are soft and deep golden brown. Lower the heat if they start to scorch, and add a splash of water to loosen any brown bits.
  3. Sprinkle in the flour and stir for 1 minute. Add the broth, Worcestershire, thyme, bay leaf and pepper, bring to a boil and simmer for 20 minutes. Remove the bay leaf.
  4. Toast the bread slices under the broiler until dry and lightly golden.
  5. Ladle the soup into oven safe bowls on a baking sheet, top each with a toast and the Swiss cheese and broil for 2 to 3 minutes, until bubbling and browned.
